Garlic scallops and pork cutlets



Serves: 4
Cooking time: 15 minutes
Ingredients

4 pork cutlets trimmed and bones cleaned*
Pepper to season
8 scallops cleaned (see note)
Olive oil to cook*
50g reduced fat margarine spread*
50ml Olive oil*
4 cloves garlic peeled and sliced
1/4 parsley finely chopped
2 tablespoons dill finely chopped
2 lemons zested and juiced
Roasted potatoes and steamed asparagus spears to serve

Instructions
1. Season pork cutlets with pepper and brush with olive oil.

2. Pre-heat BBQ or griddle plate over a medium heat 3 - 4 minutes. Cook pork cutlet for 1 min per cm thickness on each side. Rest in a warm place 5 minutes.

3. Brush scallops with oil and cook on the BBQ or griddle plate 1 minute each side.

4. Melt margarine and oil in a small saucepan and sauté the garlic 3 minutes, stir in the herbs then whisk in the lemon juice.

5. Place cutlet on a bed of steamed asparagus top with scallops, drizzle with garlic sauce and serve with roasted kipfler potatoes on the side.
