Butter here for everything; unsalted is generally what we get

Fry everything with butter, compound butters for steak and fish dishes (garlic, dill, sage, basil if tomatoes are involved etc), garlic butter in baked potatoes; lump of butter in sauces as you approach the finish of the cooking etc

Best garlic butter I've had was confit garlic taken from the oil, smashed on a chopping board then chopped and dropped into a bowl of melted butter then left to firm up, then rolled into a tube and left to set in the fridge

I get.mine from amish farm in Pa.
