Because like anything they abused their power and serve very little purpose anymore. Imagine not being able to fire a POS employee for theft, drugs, etc, or if you do the Union gets them back on the payroll in a few months.

Depends on what you're doing...

Red onions are required for things like mexican food / pico de gallo

Sweet onions for some things like salads or sauteing for omelets and shit

Sometimes green onions for asian food, shallots rarely used, white is meh and I rarely buy them.



Red and sweet are the best for most things.
