What's wrong with human spines that they just bind?

Not sure what happened, but a couple days ago, woke up feeling like I slept wrong, couldn't move my neck to the left much at all, felt constant tension in my neck. GF massages it and feels really good, but back to square a few minutes later. On the way to work stopped at the chiro and he went to the left twice, then the right, then back to the left and each time there were these huge loud cracks, almost felt like my neck broke, but after I could move my neck right and left, headache and pain went away. Felt a bit dizzy for a while. Why do our spines/backbones/necks do this crap?
