I agree that position of power is one, or how they treat those who can do nothing about what they are doing. How do they treat servers. How do they treat animals or small children, or anyone who can't retaliate. How they treat you when they don't need you is another.

Sometimes, get someone where they lose it, such as if they are drunk. If they are a mean drunk, they probably are a mean person anyways, they just hide it. Another on is pissed off, esp if it is you that they are pissed at.

The position of power is a good one, but I think "until you see them feel relaxed/safe/secure" fits better. It covers the power and more.

Once someone feels truly safe, they drop the mask.
