I worked in a restaurant when I was a kid and had to chop cabbage up to make cole slaw. I used a big paint scraper to chop up the cabbage inside a plastic tub.
One time I was holding the tub with my thumb on the inside and accidentally jammed the scraper into my thumb, scraping off a chunk of skin into the tub.
I was only like 13 at the time and honestly can't remember if I found the piece of skin in the tub or not. I may have inadvertently fed some of myself to an unsuspecting customer.
Idk, maybe I found it, though.

I used to make a fermented coleslaw, after really getting into Sauerkraut through my in-laws.
It was cabbage, carrots, garlic, salt - shredded like you would if you're making sauerkraut. I'm a pro-biotic type guy, and I was taking lots of antibiotics because of a small operation recently. Some spoons of this really helps the gut get back to normal.
Only con I can think of, is that for some people this makes them really gassy - at least at first. Not me.
