I hardly ever done cardio even when Im cutting because of my fast metabolism/genetics
But for the sake of my health and not getting winded after a set of 15 in squat, I'm thinking of incorporating two/three 30 mins cardio every week

Yes, do it 100 %
I too never did much cardio, last few months started to get more serious with it and I feel much more energized than ever before
I do 1-2 higher intensity sessions and another 2 light to moderate cardio sessions a week. Hasn't affected my lifts at all and I've been cutting for 3 months already and down like 10 lbs.

I don’t like feeling breathless going up stairs.

Do it!
I like to run in early morning/lift in evening. Maintaining is great because you can have enough energy to do some speedwork if you like, too. I struggle with that when I'm cutting.
Running is not the only cardio, either. Basketball, boxing, grappling, swimming, jump rope, all that stuff counts.
