Hard question honestly cuz different cheeses are for so many different things.

First on the chopping block I guess couldn’t enjoy a triple cream anymore cuz too niche.

No more blue cheese same reason.

A sharp white cheddar is versatile in that I could enjoy raw or cook some things with

Gruyere was leading for a bit cuz I could eat sliced thin and raw with sandwiches, cook, and melt on other sandwiches etc.. more versatile cooking applications.

Then I realize what In fuks name am I going to do about pizza. So mozzarella or fontina are a must.

But I want one I can enjoy raw as salads. So I could compromise and do fresh mozzarella and still make it work for pizza, and also eat with tomatoes, salads etc.. and could still make Mac n cheese, grilled cheese etc.

So fresh mozzarella final answer.

This is a really, really hard question.

One cheese? It'd have to be Parmesan.

But for me, Cheddar (various types) and Ricotta (the real Italian method) are up there as well.

I mean, if it is one 'type' of cheese - I might go for sheep milk as a whole category.

If it's the only cheese I can ever have, I need a versatile cheese that can shine in many different dishes or cuisine.

For me, that's Provolone, and it's not even close.

It would work well:
- On Pizza
- In/on Pasta
- On a Burger
- On a Charcuterie board (especially smoked)
- In Grilled Cheese
- Basically any type of Sandwich
- In Eggs
Etc....

My favorite cheese is actually the humble mozzarella, but it doesn't carry enough flavor and sharpness to be your only cheese.

Honorable mentions go to Harvarti and Muenster. Those two work as well on everything listed above, except the pizza and pasta... hence the Provolone superiority.
