Let's talk about meals you're fixing to make, or meals you've made recently
I got stuffed portabella's going in the oven right now.
Mixture of meat, garlic, celery, onion, diced up portabella stems, salt, pepper, onion, parsley and pine nuts.
(If I wasn't lactose intolerant it would be awesome to put a slice of cheese over the top)
Bout to be delicious and yet pretty healthy

Friday I made a really simple stewed leg of lamb in the slow cooker, with onions, shallots, broth, and fresh mint/thyme/rosemary added. The meat came out extremely tender and the broth was like lamb-flavored French Onion soup.
For Halloween we had a Halloween-themed dinner with orange peppers carved into jack-o'-lanterns and stuffed with cucumber sticks as appetizer; "ghost" asparagus [white asparagus], green beans, and trout. Next time, we'll stuff the peppers with cauliflower--looks like brains.

Been making fat breakfast burritos
2 eggs made into an omelet. Add a fried hash brown (gf is Lithuanian and its a recipe from there, but its essentially a hashbrown) Melt some mozz over it. Saute a few oz of mushrooms and spinach. Wrap it up in one of those fat fkn chipotle style flour tortillas. Let it bake for a few minutes. Home made salsa roja to drizzle over that. Its the best start to my day.

I've had it in my mind to make a nice heart beef and barley stew lately. I'm trying to work it out in my mind. I can cook up some onions, shallots, carrots, celery, etc in some butter in a pan, deglaze with red wine perhaps, then fry up the beef cubes in some more butter. make a gravy with what's left in the pan, add a bit of flour, some stock. Simmer for an hour? Add the barley. Maybe I'd put the beef cubes to the side so they don't boil to death. Or maybe I'll do all of this in a slow cooker.

All the roast chickens, then soup with the carcass for lunches during the week. Gochujang roasted chicken, roast chicken with preserved lemon, tarragon, beer-brined, even just a good amount of salt and pepper makes an awesome meal!
On the meal prep docket for the week:

Borsch
Beef and braised cabbage
Khai Jiao

I made pita bread last week and I cut up lamb into strips and cooked them on a cast iron. I put the strips of lamb in the pocket the bread makes and put a small amount of greek yogurt and some cut up tomatoes and feta cheese in there. Was like a greek hot pocket and was pretty good.
Might catch some mullet if they are still migrating and smoke some and pressure can the rest next weekend. I found a "conservation bulliten" published by department of the interior during the second world war that has canning recipes for fish.

Made a fantastic roasted greek chicken a few days ago that turned out great. Ate with roasted vegetables, greek style potatoes, pita bread and Tzatziki from scratch with 3x the garlic/lemon the recipe suggested lol
Eager to make braised short ribs this week.
Edit: also made the Binging With Babish chilli that was amazing. Dried peppers were a but of a struggle to find in my area, but made all the difference.

I just prepped some spare ribs with a wet seasoning of S&P, crushed garlic, apple juice, AO and smoked paprika. Going to hit the grill later with some grilled corn on the cob, grilled veggies and some tenderloin. Happy Sunday

I did a 12 pound pork butt yesterday in the oven, and now it's fully pulled in a bag in my fridge. Kinda excited, as it's really fuking delicious to just throw in a pan with some bbq sauce for a quick meal during the week.
Also, this is the first meal prep I've done in about 12 months, so hopefully this helps me push through another weight loss plateau.

I made pulled pork Friday but that's a pretty typical thing for me to make once a week or every other week. This fall weather is making me want to cook different things. Maybe next weekend I'll make beef stew in the crock pot. Haven't made it in years.
I really want to bake but since I'm working from home I have nowhere to take it so that I won't eat it all. lol

I just purchased a few essentials to get started in the kitchen. A couple of cast iron pans by Lodge, a decent chefs knife and paring knife, and a Teak cutting board.
Going to be preparing some rib-eye, sous vide and pan-seared, and roasted veggies. Might roast some mushrooms as well and melt some cheese over the top.

Made kung pao chicken from a recipe I found on youtube. Was delicious. Red pepper, baby corn, broccoli, carrots, peanuts, and a homemade kungpao sauce after shallow frying some chicken.

I get a lot of recipes off Food Network.
Used to watch them all the time then just said **** it and started making the stuff.
I like them because they're things that I normally wouldn't eat, parents made most stuff from a box, I had to start trying new things.

Had some extra swiss in the fridge a couple days ago. Gave me the idea for chicken corn don blew.

While shopping yesterday, I was looking for some of the “carving board” lunch meat ham, but they were out so I just got a smoked ham to carve myself.
