I'll give you a hint OP.

For a function to be invertible, it must be injective and surjective.

Function: A mapping from a set of inputs to a set of potential outputs such that for every input, there is only one output.
Injective: For every actual output (that is one with a corresponding input), there is only one corresponding input.
Surjective: Each potential output has a corresponding input. That is, each potential output is an actual output.

The number of words and ideas expressed in Latin is less than that of English. So, the mapping cannot be injective. Therefore, translations of words or phrases may not return to their original input value when trying to invert back. Quarantine is one of these words, having been a notion much newer than the language of Latin. A phrase that conveys the notion of quarantine involves several words, and that compounds the chance of an inversion error even more, effectively guaranteeing you won't return to where you started.

You can try changing "their" to "his" or "her" or "its". You get very different results. Point is that the word "observe" itself is overloaded in English and doesn't translate in a 1:1 manner to Latin. Translate is using "his, her their, its" for context to try to figure out what you are trying to say.

EDIT: To add to that even if the function is invertible (1 to 1) if this constraint is not enforced or incentivized in the training of the algorithm it is not guaranteed to happen on it own. In other words there must be a constraint that stuff cycles back to the original input after you swap twice.
