Kung Pao chicken. it's actually extremely easy to make at home and packs a lot of flavor for the amount of ingredients that you need. You can basically make a batch with some chicken pieces, peanuts, green onions, dried chili peppers, cooking wine and vinegar. If you cook with good technique, it comes out amazing and is done in minutes.

Pretty much this. Not actual Chinese food, but I love General Tso's and all the assorted variations. Mongolian Beef too (which I'm sure is also an American creation).

As far as authentic stuff, I have no clue.
