Misc Hunters: What does Bear taste like?

I recently went on an outback hunting and camping adventure, and explored hunting as a new hobby (used a compound bow and a 22.rifle & 3.08 rifle).


Tons of fun and would love to pick it up as a new hobby. Except there are no bears where I live, and just wondered, on a whim, what it tastes like. So what does it taste like, if you've hunted one?

I can take a stab just based on the look of the bear. I'd guess something like beef, or venison perhaps, with a richer or greasier flavour because of how fatty bears can be?

I had a friend who was a hunter and he gave me bear meat to try. It's very greasy.

I didn't care for it.

Depends what it eats. If it's a dump bear...pepper ur angus. Mine was a woods bear, it was young and it taste like prime rib after a 12 hour marinade, cooked over fire.

Its greasy but depends on what they've been eating, especially the last few days. Good food in = good meat.

If they've been gnawing on an old cacass or digging around trash bins, not so much.

Think red pork for black bears

Because of the prevalence of trichinosis in bears, it must be cooked to 145 so it lends itself well to any and all preparations that involve lengthy cook times like smoking, braising, roasting, even sous vide
Bear meat also makes amazing Italian, breakfast and summer sausage, again much like pork

I just wouldn't advise taking a cut of bear, seasoning like a pork chop and cooking over direct heat to well done.
I wouldnt even want a corn finished wagyu ribeye prepped in that fashion...
Just make sure and take the time to research and plan a good recipe and I guarantee you'll enjoy the chit out of it
