I don't know what "Za'atar, Toum, Tehina" is, so I'll just ask what's the difference between those pickles and regular ones?

za'atar is a sumac-based spice blend with a nice kick, tahina = tahini, the base for hummus basically sesame seed butter and toum = lebanese garlic sauce, kinda like aioli

Had fries at a gyro joint recently that had feta and banana peppers on it, was so good.

It's Persian cucumber, beets and stuff. I have an Israeli pickle recipe with turmeric and zhoug I thought it'd be like, but these are just pretty normal flavor wise.

I was so excited to learn its called Toum, at the little falafel carts or whatever it's always just called Garlic Sauce/white sauce.

I asked the lady how to make Toum and she immediately started bitching about what a pain it is to make the authentic way lmao.
