No she’s the goodest

Usually eats around a kilogram of raw meat a day depending on how far she walks

Thought I’d switch it up a bit with some medium rare

Salt, cracked pepper, rosemary, butter.
The closer we approach the uncertainty of life's ending the more we wish to trade all of the things we have acquired in exchange for all of the things we have lost: wealth for youth, knowledge for fresh curiosity, resignation for hope. We'd trade our wisdom for new experiences, but it is wisdom that will teach us that at the end of the road the only new experience is death.

After a sous vide you sear both sides on very high heat to create a crust which your steak doesn't have at all

Crust with coarse salt and pepper bro.

Put it on top and bottom of the meat and roll the edges in the seasoning too.

Sear the meat, then after that it's up to you, I prefer to baste it with herbs and butter using a spoon while it's cooking:

Almost missed the dog bowl, lol.

But no me gusta to your steak. Too rare. Best way to do a steak is medium-well, or well-done. Along with this for a steak rub: Onion powder, garlic powder, a half tsp of brown sugar, plus some salt and pepper, then coat with a small amount of soy sauce and let marinate.

The cook it in a pan with a bit of butter and olive oil, but first, use your tongs to stand the steak up on its side and cook the fat so its crunchy, not wobbly. A bonus pro-tip is to use a handful of herbs as a brush to scoop the juices up and coat the steak again while it's cooking.
Back off, Warchild.

Seriously.
