Anyone got any epic cheese sauce recipes?

Bout to make loaded Mac n cheese (smoked sausage, broccoli, bell peppers). Have about 6 varieties of block cheese right now lol.

Aight fukkers, just whipped it up. Standard roux method with butter, flour, milk, and cheese. Added a bit more milk than the recipe called for, thinned it out a tad too much. Kinda had a slight grainy taste from the flour, second time I've had this issue. :-/ Looks and tastes pretty good tho.
