Rassling and gymnastics are both elite but in terms of balance, nothing beats gymnastics.

Seriously though probably boxing.

Probably wrestling. I'm biased and say soccer too, but the one thing missing really is the overall muscle.

This. Gymnastics is an EASY number one, followed pretty closely by rassling.

Also this. The "swimmer's body" thing is a phrase but they don't have great physiques IRL. Divers actually have way better physiques.

Hard to argue with an elite WR or RB.
Look at dudes like Terrell Owens or Adrian Peterson. They're basically perfect specimens of human physicality.
- incredibly explosive
- conditioned enough for reasonable endurance at elite levels
- Strong enough to deal with 300 lbs tackles, 250lb LBs, and corners
- incredible balance
- most easily move weight that us "bodybuilders" would be impressed by (repping out 315, squatting 500+ for reps, and in the same day could dunk a ball, vertical the highest boxes, etc...

Actually, after thinking about it while typing this... I fall back on what I've often said. An elite NFL WR/RB, etc... is hard to beat from all around physical impressiveness.

The elite crossfit guys are pretty nuts though. Great balance of strength, speed, endurance, etc... but put the best crossfit guy on a field and ask him to cover T.O. or Dez in their prime and they don't have a hope in hell... even with training.

What do you do with someone who is 6'3 @ 240 at 10% and can run nearly as fast as Olympic sprinters, jump nearly as high as basketball players, lift crazy weight, take and give hits against guys thag have 40+lbs of muscle on them, and still have incredible coordination and balance.

I dunno. Hard to argue that. I legit can't think of anything more well rounded.

Right, but saying "a lot of super middle to cruiserweights" have great physiques is different from saying it's on the level of gymnastics or rassling that essentially require a balanced physique with low body fat. I've hung around bruhs who were Olympic boxers in NYC. My physique mogged every last one of their skinny-fat bodies, but they would've wiped the floor with me in a sparring match. Muscle =/= punching ability, speed, or stamina.
