Yeah buddy. I smoked both meats at 200F and then seared the steak immediately after.

What kind of equipment are you using? I smoke everything, even hot dogs, warm up pizza on my smoker. I have a rec teq that can go from 180-500 though, makes it easier than stick or other kinds. I've used other kinds, but the freedom and consistency I can get from my rec teq is awesome. I can get good smoke on my food with it and I like lots of smoke flavor.

I just have an entry level Pit Boss that I got on sale in Lowes.
