What exactly is bread protein? srs

I imagine protein in bread is of the lowest calibre and probably indigestible and makes plant protein look complete

The main source of protein in wheat is gluten.

Protein in bread comes from gluten. Also, vegans love to cook with gluten (seitan) which I think is funny because half the members of that group demonize gluten while knowing nothing about it, while the other half basically survive off it as their primary source of protein

I cut wheat out of my diet earlier this year and I feel a lot better. I think I was having problems from the gluten.
