Another Steak Thread (Pic)
Grass fed. Cast Iron cooked. Coffee and pepper based rub. Cut up pickles and kimchee as a side.

I have made my own before but this is just the Cleveland Kitchen brand kimchee from the store I have been trying. It's pretty legit.

More insight into how you tweaked your gut health, sounds very interesting
As for the gut health it was pretty simple once I figured it out. Just takes a while.
I did keto for 2 months as a sort of reset. After I took care of the H. Pylori (naturally by myself) I didn't take care of the other issues I had which were low stomach acid and recurring candida on my tongue/back of throat because of it.
So on keto I just did tons of red of meat, bone broth with coconut oii/mct oil which really took care of the candida issue over time, and I would eat things like eggs, sweet potatoes here and there just for a little bit of carbs, and then random vegetables like peppers, squash, radish, green beans, and others cooked in different ways. Cut out caffeine and sugar for those two months. Only drank water and Zevia (stevia based drinks). Snacks would be like beef jerky, homemade eggs bites, etc.
Now that I am on a normal balanced diet though I tweaked things and figured out these are the main things that really changed my gut health and digestion that anyone should incorporate into their diet. You'll notice benefits over time and be shocked. srs.
-Beef/Chicken Bone broth with coconut or mct oil. Actual organic bone broth is expensive af but it is insane how much it helps gut health. srs
-Fermented foods. Kimchi, sauerkraut, pickles, etc. These are probiotics and help your gut health a lot because the acidity level is closer to what you gut is
-Raw apple cider vinegar diluted in water for the same reasons above. Literally a game changer
-Eating mainly red meat and eggs for protein sources
-Cutting out majority or just minimizing consumption of pasteurized dairy
-Minimizing sugar intake
-DO NOT drink a lot of liquid with meals. This is a big reason I had low stomach acid because of poor eating habits. When you have low stomach acid you end up getting acid relfux/heartburn because you don't have enough acid to efficiently digest and breakdown the food. Then is just sits there and causes a host of issues like acid coming back up and bloating.
-Chew your food thoroughly before swallowing
-Stay away from all "alkaline" products/water, acid reducers, and tums. It has the exact opposite effect you want
Basically the main thing to note is that your stomach has a very acid pH. The medical industry is bought out by the pharmaceutical industry and for some reason tells people that all your gut issues are caused by too much acid and to prescribe acid reducers and things like tums. It's literally the exact opposite and is well known at this point. Stomach acid is good. Acidic foods are good and help your stomach keep unwanted bacteria at bay.

However it is pretty amazing how once you take care of the main issue, just basic dietary changes and maintaining a good diet structure takes care of most issues.

I've done my own chicken stock and broth, but have gotten lazy and have just been buying a bunch of the Kettle and Fire brand bone broths whenever I see a sale. Expensive af but it's worth it for now.
Do you just go to the butcher and get this stuff? I used to save all the whole chicken carcasses and use those a lot.

It's fooking amazing though. This is the only brand I've tried for a coffee rub though. This goes perfect with any fatty cut of meat like ribeye, chuckeye or picanha.

I'm surprised more people don't use a coffee rub. I normally use a dark roast mixed with a few other savory spices. It's gives your steak a nice crust and adds an earthy, smoky flavor. It's also works well as a tenderizer.

I like the Fire and Kettle brand as well and have bought it here and there. For awhile, I used the Trader Joe’s brand because it was a third of the price for bone broth.
I get the oxtails and pigs feet from usually Asian or Hispanic groceries. The quality of the bones, oxtails etc are higher all while being cheaper. Some of the oxtails and beef bones I get from a local farm that gives them to me when I buy steaks.
