Bumped your San Marzano thread Opie, made some GOAT sauce.
But who was omelette? Onions, peppers, garlic, bit of whatever meat, and some cheese. Now that egg prices are back down (less than $10 for 5 dozen at Wally World) dis gonna be my go-to so I don't pig out for lunch at fast food lol.

both are staples, but don't pair well IMO. Eating a bunch of bland rice with boiled eggs, no thx jeff. Eggs + sourdough/quinoa, rice with beef, chicken, tuna.

Omelette is crazy, can hearty or thin and delicate, use up leftover whatever in it. And eggs do so many other things too. It’s nuts.
This morning I made a diner style omelette filled with some leftover steak I smoked last night, onions, fresh herbs and mozzarella. I let the onions caramelize real good too, hnnng.

They're half fat, half protein, and take up half the plate for about 15 grams of protein. They are fine on their own, so to speak, but have a heavy bitterness that needs something utterly distinctive to pair it with, like acid, salt and/or sugar.
BTW try orange/lemon/lime over your scramble.
