Smoking ribs in Biden's America
5.17-lbs of ribs for $7.60 ($1.47/pound)
St. Louis ribs, so I trimmed the excess to make them more like baby back spare ribs. Coated both sides with Kinder's Molases Hickory Spice.
The excess which contains more cartilage is better cooked up as carnitas in an oven. Then I can manually separate the cartilage from the meat, and make carnitas tacos.
Using cheery wood pellets for the smoke ribs.
After searing the excess meat in an enameled cast iron Dutch oven, used a little beef broth to scrape the residue, onions, and traditional carnitas spices to slow cook in the oven.

Those were spare ribs. You trimmed them to make them St Louis style spare ribs. Baby backs are higher up on the back closer to the spine, spares are the side of the hog.
But Iโm digging the carnitas thing youโre doing with the rib tips. Reps for ribs.

UPDATE: Finished
Ribs came out juicy AF. Fall of the bone ripeness.
Carnitas flavorful, tender with a bit of crust. Literally tear apart with my fingers.
Had to make homemade flour tortillas. No corn or masa to make corn tortilla. My rolling skills are 0/10 so I took a knife to the tortilla if you're wondering why the funny shape.
It was all delicious. Whole meal under $9, and have enough leftovers for another 2 meals out of it.

Smoke ring, and lightly pressing on the meat made juices flow like a thirsty sloot. Literally flowing down my chin.

Carnitas out of the oven, too hot to separate from the cartilage atm.

Final. Little BBQ sauce for dipping. Carnitas on tortilla, cheese, white onions, and lettuce. (no cilantro and tomato unfortunately).
