I do pull ups all the time, never deadlift. Deadlifted yesterday randomly with light weight, upper back sore today. So probably deadlifts tbh. I don't think pull ups hit upper back.

Deadlift, but if that isn’t upper back focused enough, then chin ups, for the added biceps work it gives.

But when it comes to back I'd never pick one exercise. I like having at least three movement.

-Lateral pulling. Pullups, chinups, lat pd, etc.
-Horizontal pulling. Row variants.
-Hip hinge. Deadlift, Romanian Deadlift. Rack Pull. Etc.
