Getting coldish out, it's chilli season.

I'm experimenting with making a chipotle chicken based chili. I used some new chili starter product I found at the grocery store, along with a mix of 5 peppers and onions chopped up. I marinated the chicken in chipotle peppers and hot sauce, and I'm adding chipotle ketchup and sweet and spicy bbq sauce to help mild out the heat and acid of the chili. Towards the end, I'll add salt and seasoning to taste to tweak it.

I plan on making some classic Jiffy cornbread with added honey and butter to serve on the side. Should be good.




Anyone else enjoy cooking chili this time of year?

Yea I love a good chili. Will probably make that at some point within the next week or two. Interesting chili idea. Post about it when you're done. I want to know how it turns out.

I'm about to throw in a huge grass fed chuck roast to slow cook for 6 hours. Slow cooker food is GOAT in this type of weather.

Throw some chopped roasted green chili in the corn bread batter mix before baking. Levels it up.

That chili came out great, throwing chipotles and chugwater chili mix from a place back when I lived in WY really made it unique.

I didn't do that, but instead of water I put in 2/3 cup of cinnamon eggnog and a half cup of water into a mix of 2 eggs and two boxes of jiffy corn bread mix. I melted two tbsp of butter on top of the cornbread right after it came out of the oven. Hnnnnggggg
