I make a variety of pasta salads to keep in the fridge during the week. I also make a variety of different wraps with tuna, chicken, turkey and egg salad. Sometimes I'll microwave some potatoes and throw together a potato salad.

The heat shouldn't really be a problem. If you boil rice or pasta, you aren't stuck in the kitchen with it, just put it on and come back when it is done. If you don't have a/c, just open the kitchen window and close the kitchen door, do the humidty doesn't build up or spread through the house.
The heat is only a probem if you are stuck in the kitchen having to constantly stir stuff etc.

Put rice or pasta in a big plastic tub with water from the kettle and throw it all in the microwave on a low setting. The microwave won't cook it much faster than normal, as the water has to soak in, so you only need it to keep the water hot.
Or
Jacket spuds in the microwave.
Or
Be a really lazy fk and make instant mash or instant couscous (you can make normal couscous in the microwave) with just water from the kettle.

Go to town on some bananas or something. Might be a good idea to invest in crackers or some such stuff if heat is an issue in cooking.
