This thread has been giving me LIFE during the past two months of my cut (completed as of yesterday) to get under 130.

Now I have something to contribute: my girlfriend's birthday cake. I'll show the inside later on tonight--it's got layers of chocolate and peanut butter icing. We decorated it together with "chocolate clay" made with chocolate and HFCS so it becomes malleable. The decorations are therefore edible, but not all that tasty.







Annnnd some of my final cutting meals here:

chicken quesadillas on low carb tortillas with potato [because I only picked the low carb tortillas to get more calories of potato], onions, peppers, and cheese. Roasted veggies on the side + raw cucumber salad:



Trout with asparagus, steamed beet greens, thyme-roasted beets, and Japanese sweet potato:

@Red - no sauce or cheese. I'm still working my way through Jim Lahey's book. My favorite so far was this zucchini (incredible amounts - you salt and then squeeze the water out of it) and gruyere. No sauce, but it was like...crunchy pizza, "fluffy" ultra savory-zucchini pizza.

This was tonight's pizza (his dough recipe is enough for 2 sheet pans' worth):

We are thinking of trying cast iron pizza next. I'm having problems with the seasoning on my cast iron though - got it and seasoned it right, I'm sure, but chicken thighs, even steak "sticks". Ends up being a real pain to clean and re-season each time.


@Red - why preserved lemons? I have never purchased or made any.

It's really common in Middle Eastern cuisine. It's a nice way to get the brightness of lemon with the intense tartness that can come from the peel. I use them in lots of stews, especially seafood stews.You can just chop the entire lemon and toss it in.

@red, whatcha doing for workouts these days?
I've been hitting up so many bodyweight workouts--I did 100 pistol squats today, plus 40 shrimp squats and 225 push ups, along with a bunch of jumping jacks, handstand practice, and jiu jitsu movement drills. Tomorrow I'm doing more 'pull' movements, like gi pull ups and fat grip pull ups on my brother's new rack.

On another note, I recently had a gastritis flareup. It's something I've dealt with for years, mostly with medication and diet change. Basically, I can't eat a lot of fat, definitely no fried foods, and also no: tomatoes, strawberries, sugar snap peas, garlic, cottage cheese(????), beans of any kind or bean products like tofu, corn or corn items, and bread that has too many seeds in it. Soooooo if anyone has suggestions for how to make a curry without these items I value it. Also what to sub for tomatoes in lamb saag? Most of the dish is totally doable, and I was thinking of subbing in red peppers?

Thanks for the tip. I have seen them use them on Milk Street. But, I bought two big packets of Miso, thinking I was going to get around to doing miso pulled pork. Cuts of pork are still a rarity at my favorite butchers in this city (The Meat Hook, as an example...they seem to sell out quickly). So the miso sits in my fridge...making me feel guilty. Hah.

At least Whole Foods delivery is back with some regularity.

I would recommend some pumpkin & tamarind instead of the tomatoes. My mom hasn't been able to eat tomatoes in a long time and I made a lamb saag for her once that she loved. I didn't miss the tomatoes at all - the color would be a bit different in other dishes but your saag should still be creamy green

I cut up a whole chicken and grilled it. Boneless breasts, boneless thighs, bone in wings and drumsticks. Came out nice. I need to make some sauce next time. And chickens should have more wings.

Made a bunch of pelmini last night.



And for my post workout meal, I turned it into a spicy mustardy dish, with a ton of smetana and fresh dill.

My BJJ gym is still closed so it's all home workouts for me, on the Peloton and whatever strength training I can manage with free weights and a bench. I sprained my ankle while hiking really badly about a month ago and I'm just now getting range of motion back.

The red peppers substitute makes sense to me. For the curry, could you maybe do 1/4 cup or less of low fat coconut milk, then a chicken stock and thicken it with a cornstarch slurry?

I'm surprised to hear about the pork scarcity. I've been hearing that it's easier to get than ground beef, but maybe it's specific cuts you're after?

Did a nice trip out today and saw a farmers market near Eataly - a lamb purveyor had some awesome stuff. But I want to rid my fridge of these miso packets first. Will get on it after vacation.

No pics this time - been going out to eat, and am trying longer fermentation (2-3 day) versions of my no-knead bread approach. The 2 day version was already vastly superior - the crumb structure was completely different. The first 18 hours on the counter, then 24 hours in the fridge, a final two hour proof on the counter (after shaping) then bake. Just...hnnngh.

Yeah, BJJ gyms aren't opening in NY until we have a vaccine, it seems--crazy. I'm glad you've got peloton. I've heard good things. As for curry, low-fat coconut milk should be fine, I think--we'll see.

I did it! I used pumpkin, though no tamarind--honestly forgot--I'll try that next time, as I can see enjoying the acidic flavor. We've made dishes with tamarind before and liked them.

Unfortunately i don't use a butcher at all--we eat mostly fish, so.


@Stoli yes I LOVE steelhead trout. Better than salmon--mild and sweet.
