I remember reading this but dismissed it cuz I dont go there. obvsly they buy cheapest suppliers from all over the world. defo not some organic farm in napa valley or somewherez.

I read somewherez that fish is another cheap-out product. restaurants buy fresh-fish from china and that entire region and ship to the best restaurants seafood in the US. obvsly not the top places but nice places. even next to the water (as you would presume an oceanfront restaurant would source nearby).
