Yeah, they actually grow a lot of them in Colorado at 7500' elevation. Never thought of them as a southern vegetable myself.

Very true. I could eat them for every meal. Pasta and rice are poverty in comparison.

Potatoes are GOAT

Low calories as well and super healthy.

I had potatoes probably 4-5 times a week growing up.

Ever felt horrible after slamming down a perfectly cooked and seasoned steak with a large side of potatoes and greens? All washed down with a cold beer or water. Feelsgoodman.

I love potatoes srs. Roots make up a large portion of my daily complex carb intake. I don't even consider them vegetables anymore, just starchy carbs.

So versatile, but my current favorite is dicing them up and making baked 'fries.' Bit of salt, pepper, onion and garlic powder, smoked paprika HNNNGGGGGGGG

I buy large bags of them, so inevitably I might have a few that sprout 'eyes.' I save those in my cellar and plant them in my garden in the spring. It's a lot of fun digging up that garden in late summer and getting a massive bowl of fresh potatoes that I can hose off and eat immediately.

Potatoecels... When will they learn?

They are pretty tasty once you add the fixings but they are a relic of a time when food was scarce. They are excellent as a single calorie source but not great as part of balanced meal. My wife is obsessed with potatoes and I rag her pretty bad over that since the only way her name could be more Irish is if is was Shamus O'houlihan

Tell that to the Irish
brb haven’t met one vaxcel who doesn’t get defensive or mad when you tell them you didn’t get it.

No “vax” for HIV after 40 years of research. No vax for cancer after 100 years of research. No vax for the common cold and yet a virus mysteriously appears and Within 12 months a “vax” is found by 4 pharma companies all within 1 week and we are mandated to take it ….
