I make hash browns mixed with peppers, onions, 3 eggs and cheese almost every morning. Great way to start my tradie day.
I love egg sandwiches, but I always end up overfilling them and make a mess. Then I have to eat the rest with a fork. Might as well just eat an omelette.

Agree with OP 100%. Made a badass fried egg sumbitch today, buttered bread pan toasted on both sides (outside slightly crispier), very thin spread of mayo, 2 fried eggs over medium (3 is a mess, 1 is poverty), and a nice thick slice of real cheese. Cheddar is classic, Havarti is fukkin divine, Mozzarella is nice and gooey. No meat. That goes on the side. Meat fuks up the texture and takes away from the sublime combination. Ham or bacon, maybe sausage, make it a decent amount. There is nothing better on a weekend morning. Nothing. Not even pancakes.
Virtue is its own reward.
