I used to have both a charcoal and propane grill. Propane is definitely more convenient, but whenever I would cook burgers on the gas grill because I didn't want to be bothered with waiting until the charcoal lights, I would always regret my decision shortly after because I knew the burgers were poverty compared to how they would have tasted had I just took the time to light up some mother ****ing charcoal. Now I just own a charcoal grill. If I'm going to grill, I might as well do it right.

Charcoal is no trouble at all imo. It’s literally like 3 mins too repeats as long as you have the coals, some newspaper and a lighter. I don’t use fluid.

Gas is just much easier and quick. You can get a smoker box for a gas grill as well if you want to flavor it with smoke from wood chips.

For steaks or tri tips, I reverse sear in a toaster oven at 225f till center is @130f and then sear on a cast iron pan on my outdoor gas stove that gets really hot. Comes out medium rare with a very good sear every time. Ribs and chicken I use my gas grill or my Ninja foodie XL grill. Looking to get a smoker and it'll be electric.
