I got pretty into paintball, but it is only cool if you have good courses locally and a regular group to play with. It's also expensive, I wouldn't recomend investing in a gun unless you are willing to drop $800 minimum on one.

Fly fishing. You get a tan, some exercise walking through the river, can some have some beers, and it requires some actual skill to learn just basic fishing. You can even tie your own flies for something to do if you feel like it.
