I don't know how things work in Canada land but in America medical information in confidential, and you can't just demand to see proof of things like that. She's not obligated to give you proof and you have no right to demand proof, so based on that you would be in the wrong. As for what you said about you've had to show people before, what does that even mean? Did someone point a musket to your head and demand you turn over your covid test? What you do you mean you had to show people?
Anyways, it wouldn't be a big deal for her to show you proof and I don't see why she wouldn't, but she is well within her rights to refuse to show you.

seems pretty dumb someone can make up they have covid to affect you. as soon as you enter another person into the picture and it's going to affect their life, i think it's pretty easy to say okay, here you go
like if you lived with me and i told you i had it. and that you had to quarantine and miss work and do all this chit, i dont think its out of the ordinary for me to prove it to you. if you have to call off your work and miss pay and all this chit then i think the least i could do is prove it to you
if i didn't affect you at all then i dont think you should know
