I should have mixed it first so you could see, but the tonnato - that tuna 'sauce' is piled up under the arugula. I spread that out like a thick herbed butter all over the vitello, so the flavor was (I'm salivating): tuna, dried capers that exploded with brine-punch, vitello savory juicy, and the sauce - that's the mouthful. The arugula 'cut' that, but yeah - we were spooning it up in big mouthfuls and demolishing it srs.

It was legit luxurious. Polenta was full of flavor, lots of aged parmesan in there too. That buttery richness with the richness of the short ribs...we also had a sauce on the side but I hadn't poured any on until after the polenta was gone, srs.
