Lookin good. Wife isn’t big on sausage, (besides her bf’s ) so I usually end up using short rib or beef shank.

One game changer I discovered is finely grating the onion, carrot and garlic in the beginning.

80/20 chuck,I don’t use porkor veal anymore, makes them taste less “beefy”. 1 egg per lb of chop meat, 5 in this case. Bread crumbs, parm cheese, sautéed onions & garlic, basil, parsley crushed red pepper, salt, pepper, Italian seasoning and a little tomato paste.

Another good tip for sauce is to fry the tomato paste in the oil after you've cooked the onions and garlic. Just for a minute or two. It removes that raw tomato paste flavor. Then add some wine and cook out the alcohol before adding the tomatoes.
