Your self control is impressive, Stoli. My plate would have been piled high with King Ranch Chicken goodness.

If you haven't tried this yet, go pick some up.

I am making this tonight by the way. I will post some pics if I remember.

Edit: I didn't snap a pic but this came out so good. I used a Costco rotisserie chicken. I almost ate half the pan.

Snapped a pic because *vegetables* and at least half-assed cooking.

I call this method "sautee stuff in a pan".

Cut up some meat and veggies into roughly compatible shapes. Sautee with some butter or olive oil and whatever seasoning takes your fancy.

Tonight it was chicken breast w/onion, bell pepper, and yellow squash seasoned with lemon pepper, oregano, and garlic.

Had some little red potatoes and arugula & spinach salad for sides.

This is called dump cake. There are lots of versions of it. It is a stupid recipe but it is delicious. This one is a can of cherry pie filling, a can of crushed pineapple, a box of yellow cake mix sprinkled over the top, and some melted butter drizzled over that. Then it is baked. Voidgaze, you should cook this for a woman.

Damn! Looks good RR.

Finishing off some leftover crawfish etouffee I made over the weekend. First time I made it and it came out GREAT.

As much as I like gumbo I feel that making this was easier and really delicious. This is on par w/ the Red Beans and Rice I like to make.
