NY strip with truffle butter (it was huge, I could only finish half), grilled asparagus with bearnaise sauce, mashed potatoes, and lobster mac n cheese. Oddly enough, my fav was the grilled asparagus.

For that stock I bought some boxed beef stock from the store and simmered it overnight with some chicken parts and pork neck bones to give it a lot more body.

I cut up an on-sale brisket and made corned beef. Some of it I turned into pastrami. I ate a lot of pastrami that week. I have a five pound corned beef brisket flat in the freezer for some other time.

Peel and eat shrimp, asparagus, and Thanksgiving mishroom risotto with turkey stock and poultry herbs. That risotto was very festive.

Some sort of allegedly heritage breed pork loin and a big green salad.

Potato and cheddar pierogi for a vegetarian dinner.

Braised beef tips and mushrooms in gravy over rice.

This is a deboned chicken leg quarter. I have been deboning thighs for years but wanted to see how easy a whole chicken leg quarter was before I attempted to debone a turkey leg quarter for Thanksgiving.

I hope all your Thanksgivings were okay but not quite great.
Cooking deboned light and dark meat turkey turned out suboptimal. The breast was good, but I don't think I'll ever cook turkey dark meat again without braising it at some point or making confit. Something about those cooking methods give turkey dark meat a much better texture than nakedly roasting it, even if I roast it until well past the point where connective tissues should have melted.

They were a NYE staple when I was a kid. These days EZ peel shrimp are typically less mangled than already peeled shrimp, and they're a little cheaper. I still feel like a traitor to the Gulf when I buy these Argentinian shrimp, though, but they're just so lobstery.

The piece read like someone at Texas Monthly owed a tremendous gambling debt to one of the guy's parents, it was such a weird puff piece. Then there was a couple years of silence from them, and then they launched their product out of the blue and it's actually good. I was not expecting that.

My extended family and friends group did an early Thanksgiving three weeks ago, which was great. It was easy to buy all the ingredients without fighting people at the stores, no one who travelled here had to endure Thanksgiving traffic. It was awesome. My mother roasted a turkey, and my sister's boyfriend fried one. Many of us think this is the way to do it going forward.
Last week I had some friends over for a smaller Thanksgiving. It was okay! Like I said, deboned roasted dark meat turkey kind of sucks, at least from that Butterball bird. In the future, if I can get the larger traditional Thanksgiving done early, I'd like to do smaller gatherings on the official holiday and cook less traditional fare, like turning the dark meat into sausage and smoking turkey sausage and turkey breast - that sort of thing.

I made some soup with the same ingredients for red beans and rice plus some chicken. I like to buy a whole chicken for $6, cut it up, make a couple quarts of chicken stock with the bones. It is cheaper and better than buying stock.

Pickled red cabbage is very nice on a salad.

I like to buy the 2lb bags of IQF ahi tuna at HEB or Sprouts. I'm sure H-Mart has good stuff too. I defrost a tuna steak or two overnight in the fridge. When you buy the tuna, make sure it's all still frozen (Sometimes the bags on the top have had enough time to defrost a bit) and make sure the little IQF bags fit snugly around the tuna steaks or you'll lose some tuna to freezer burn.
When you cut up the tuna, if you see any silver skin, trim it off. If your feel your knife encounter some resistance, there's probably some silver skin or other connective tissue there that you should try to trim out.
That's it. Poke is easy and good for you. You probably live close to a H-Mart that has interesting prepared pickles and kimchi and banchan and whatnot that will go well in a poke bowl.
They Katy Asiatown mall is a small version of Bellaire. It will grow a lot in the future. It is for people who don't want to deal with the traffic on Bellaire.

Nah I didn't start venturing out into town until 2019-2020ish. I always knew Houston had a pretty well established Asian town but I never went. I'll be checking out the one in Katy and Bellaire now. Thanks.

I do like the new kitchen because it's MINE lol, but aside from that I like the island design, unfortunately my sink is just one big sink and I'm so used to having a split sink for washing and rinsing dishes. I do have a dishwasher, but I've spent a majority of my life handwashing dishes so the unified sink design is a small annoyance.
Once I get rent and monthly avgerage spending ironed out, then I'm going to work on the home bar, shelves for dishes, barstools for island dining, then a small cafe table. I'm very excited to start making it my home. It feels so surreal sometimes, never thought I'd make it here.
