I think the cultural aspect of how people choose to live can't be overstated enough. there was a recent video going around of an indian doctor in a us hospital eating with her hands a bowl of rice. what made it so odd is that a doctor would intuitively/seemingly know that eating with your hands is bad hygienically when it comes to some foods (some are worse than others)....btw: i think she was a surgeon!!!

of course the rebuttal was "well you eat pizza chicken sandwiches whatever with your hands" however eating some foods invites all the bacteria in your NAILS and also prolonged contact time with your hands = more likely.

i remember watching some actor talk about he only eats with plastic utensils new because of germs. he isn't wrong...maybe super paranoid as if you are rich actor you usually aren't eating in dirty places but chopsticks are more hygienic than spoons (likely cuz disposable). plastic utensils done up the food-safety game. most peoples attitude with food safety is let the good times roll until they get very sick.....I ate spoiled ribeye cuz I didnt' wanna waste it and still have flashbacks about how sick I got.

Ive met many from south east asia in the US who never eat with their hands over here even when nobody is around but they do it when they visit their home country to fit in over there.
