Wrong. Eat steak raw like nature intended. Good luck making a steak tartare yourself though.

The only steak that lives up to the hype is kobe... Absolutely melt in your mouth perfection..

A steak from Texas Roadhouse is on par with most of these '$$$$ Steakhouses'
Agreed.

Get yourself a lump charcoal BBQ, know how to use it and throw in some good quality cuts...

I like going to longhorn steak house. My NY strip is always cooked to perfection. For sides I have the mac and cheese(hnnnng), and loadaded mashed potatoes. I also enjoy people serving my food and catering to my needs.

Steak itself is the most overrated thing ever, not just steakhouses. I like it, it's fine, but it's not the GOAT. And the more you pay, the less I like it. A Roadhouse sirloin is about the best money to flavor ratio out there for steak. And no matter how good it is, it's still better with Heinz 57 sauce. Steak snobs ruin the experience when they start bitching about you putting sauce on it.

Exception: Brazilian steakhouses. Holeeee fuk. They should have a small dining room in the back for assisted suicides. What a way to go.

Repped OP. You're absolutely right.

And the reason is because steak is something that requires minimal "done" to it to make it good. Basically salt and cooking it to the right temperature is all that's required. There's no reason someone can't replicate that at home.

So why pay $40+ for a steak at a restaurant when you can buy a ribeye at the grocery store for $8/lb and do it yourself? And even better, you can probably cook it faster at home than you'd get it at a restaurant. On a grill you're talking about 2-3 minutes per side before it's done.

I think expensive steakhouses are hit or miss. Some of them are amazing, others are a waste of money. I think del Frisco's is always worth the money. I went to a place that was twice as expensive for my birthday one year that wasn't as good, though. Half of the steak was melt-in-your-mouth amazing, but the other half was so chewy it was almost inedible

Had bone in rib eye last night. Used lump charcoal. Seasoned it with the Shula's recipe, I got off the internet and olive oil. Came out perfect.

Here's the rub recipe if you guys are interested. I don't use withe pepper. Black works fine, you can use Lawry's seasoning salt instead of kosher.

This is how itโ€™s done, Shula style:
1 cup kosher salt
4 teaspoons ground white pepper
4 teaspoons paprika
2 teaspoons granulated garlic
2 teaspoons thyme
Combine all ingredients and mix well. Rub on room-temperature steaks just before grilling. Store unused portion in airtight container. Makes about 2 cups

Texas Roadhouse isn't a "fancy" steakhouse. It is the Applebees of steakhouses. And I don't ever see Prime beef in regular grocery stores, usually just Choice, so unless you have the beef hookup and a high temp searing oven,I don't know how you could make a steak at home that competes with Ruth's Chris or Mortons style steakhouses (and those are just nationwide chains). I think that a lot of you guys are eating Texas Roadhouse and Outback and considering it a "fancy" steakhouse, that is why you believe that you can prepare the same meal at home.

I've eaten raw steak since I was very young somewhat regularly. Never has a single issue, I guess your perceptions say something about the crappy access to meat and food prep you have.

Surely meat markets/butcher shops aren't that hard to find? I don't even buy ground beef in my regular grocery store unless I happen to need it on a Sunday. You can do so much better.

I only cook prime at home now if cooking a steak, but I know it is hard to find in a lot of cities. I usually get prime strips for $16-18/lb at my grocery store.

Ring worm? Salmonella?

So the deal with beef is that there aren't really any pathogens in it you need to be worried about. The surface can develop them after the fact, but that's why it's acceptable for the outside to be cooked and the inside rare. The surface ends up cooked and the inside there's nothing to worry about.

The reason tartare works is because they're not using sections of beef that had surface exposure.

And the reason ground beef can end up with pathogens is that the surface gets distributed all throughout the beef. That's why most restaurants won't serve you a rare or medium rare burger. The pathogens might have had a chance to spread throughout the meat, so the middle isn't as safe.

Former butcherbrah here.

This is also why they use dry ice to grind meat in packaging plants. The meat will not only have surface bacteria but the heat generated from being ground up causes more to fester/form. So they pour dry ice over the meat as its grinding.

I thought it was interesting

I score mine at Metropolitan Market in Seattle. It's down the hill from me. Eat at least 2 prime strips/week since moving near there.

we have a titty bar here in town whose owner also owns a cattle ranch

the thought of eating at a titty bar disgusted me but i caved one time and it was a perfect steak for 1/4 the price of a steak house

if you go during happy hour, all 65 beer taps are $2.25 a pint

not to mention titties

it's impossible for me to go somewhere more expensive for the same thing after that

Sirloin is probably the worst cuts of steak. Of course you need to drown it in steak sauce.

I'm not a steak elitist. I actually prefer to cook them at home and average 4 steaks per month at home.

But you need a good cut of meat and the right sear for them to be truly 'great'. Until you eat a steak so tender you can cut it with just a fork you probably haven't had an actual good cut.

The perfect steak should be tender and juicy in the middle with a nice crust on the outside. Hggggnnn.

There is a noticable meat quality difference between what steakhouses purchase, and what you find at the supermarket.
