Anyway, like I was saying- I was purely speaking on the perspective of these chefs that dream of cooking in restaurants like these. Is it a lot of nonsense? Eh maybe... but I personally think there's something sexy as hell about a person that loves cooking, and has the ability to be so precise about it in that competitive environment. I think these chefs in these restaurants are pretty incredible, and if they love that atmosphere, more power to them.

I've had "the best" and it's good, but not 10,000 times better than a similar steak done in a similar manner.
Personally, I find anyone who has great interest and passion for their work sexy. But, just as with physically sexy people, if they have an obnoxious attitude they are no longer sexy to me no matter how they look.

Just got back from a quick lunch at Jean Georges here in NYC:
Had a 3 course lunch meal and must say the highlight of the meal was the terrific spin on popcorn tacos here.

I ate at Thomas Keller's Per Se in New York. It was amazing. I will say I felt a bit out of place. My family did well for themselves, but this place was a whole new level.

For poor people (like, legit 3rd world poor), it's about just getting any calories you can.
As you move to more prosperous people, you can afford to broaden the variety of foods.
After that, you're talking about being able to cook better and have different styles of food. But in the end, you're still only trying to satisfy that need to fulfill hunger. At this point, you're kind of capped out on what "food" is providing, since your actual food needs are 100% met.
To take it to the Michelin level, you're really just talking about "experience." The difference between a $100/person meal and $500 is all in the experience. You're no longer paying extra for food, you're paying to be entertained.

No but I've eaten at two different one Michelin star restaurants in my home town. Both are pretty cheap and the food is good. Although the portions were small. Food was rich though.

I've been to per se, le bernardin, John George, Daniel, and a few other notables.
It's an awesome experience and try to hit one a year.
It took me 6 months to get into dorsia, i mean per se.

All it takes to refine your palette is really to start paying attention to what you eat, and start learning about all of the flavors of the food you eat and try to define it. So instead of "this takes like herbs"- what herbs do you think it is? If its bland, why is it bland? etc.

I have some friends that just recently ate at Fat Duck. Let's live vicariously through them

^^
They had headphones plugged into their dishes and were "listening to the food"

I loved the title of the movie. The idea that just walking a short distance to meet some neighbors might as well be an impossible journey.
In addition, I enjoyed how Indian food has many spices and ingredients but is see as some kind of casual type of meal. I've made Indian dishes and it's not easy!
Well, I love cooking too and have taught myself all kinds of things, mostly through experimentation. For instance, I was annoyed how on TV they would saying "It's Impossible to make puff pastry!!!" and of course I had to try. It is actually super easy to make. So, I became really good at making desserts, breads, etc but then discovered gluten makes my stomach sick. So, I don't make as much as I used to. Anyway, it took me a lot of failures to figure out how to do it all properly, but it was fun, like a science experiment.
I think it's important to not get stuck on making something perfectly but rather trying something out and then analyzing what went wrong. I don't know what you do for work but trying a class may be something you never have time for, but at home you do have some time to fool around.
On an unrelated note: It is hilarious that you joined in 2015 and have 39K rep! You gotta love it.

I can taste stuff that other people can't and can sometimes identify individual ingredients. I have an incredible sense of smell and I believe my ability to taste and season food comes from that. I think it's sometimes genetic.
