Nahh, gnna have to disagree with you bro. I can do ribs but my brisket is hit or miss, brisket is by far the most difficult thing to cook. You have a small window to take it off the pit, to eary and its dry/tough and to late it falls apart and is dry.

I confess I'm only an eater. Up here in DFW nearly every decent bbq place can make good brisket, but I've found very few that get ribs right. Maybe it's because they spend all their time on the brisket and ignore the ribs, but I've been to plenty of spots with amazing brisket and terrible ribs. The good ones in the magazines always nail the ribs too. FWIW the sausage up here normally sucks too.

Of course Pecan Lodge does have better brisket and ribs than any other spot I've been too. I can't imagine anything better than that. Liquid fat that makes a brisket on par with a prime cut steak.

Yeah, it's tough to go to a BBQ place and actually get GOOD Brisket/Ribs/Sausage all at the same time...usually something won't be up to snuff. It also depends how you like your stuff, on the ribs some people think they suck it they don't fall off the bone when you look at them, which is wayyyy over cooked but still tasty, so lots of variations.

Will have to keep this in mind next time I roll that way.
