No one says Bo Jackson is the best runningback in NFL history, and if you're not considered the best ever at your position, it's hard to say he's the greatest athlete ever.
There's obviously no correct answer to the question, it's more interesting to hear the justifications people have for their pick.

Bo Jackson in his prime was the closest to a real life superhero I’ve ever seen. He was the main reason I enrolled in sports when I was a kid.

Adding more for the Deion Sanders arguments:
Sanders is the only man to play in both a Super Bowl and a World Series, to hit an MLB home run and score an NFL touchdown in the same week, and to have both a reception and an interception in the Super Bowl. There is only 1 sport everyone competes in from childhood. That's sprinting. Usain Bolt is the best to ever do it.
Guys that are not fast enough to compete in the Olympics as a sprinter do other things.

Guy fought world champions / top pound for pound fighters for 15 years in 5 different weight classes and won every single fight. He had like 3-4 tough fights in his career. Keep in mind he fought top opposition his whole career. Hall of famers in their prime. Unheard of. No One comes close. Especially considering how big of a sport pro boxing is.
