I think Russian tends to get a somewhat deserved bad rap when they lean a bit too heavily on the mayonnaise and smoked fish. Great in moderation but can be overwhelming. Then you start getting into Uzbek and Georgian stuff and it is just wonderful. Dill all the things!

Here you go!

4 ounces cream cheese softened
4 large eggs

1/4 cup unsweetened almond milk

Oil or butter for the pan

Instructions
Line a large baking sheet with parchment paper.

In a blender, combine cream cheese, eggs, almond flour, sweetener, almond milk and salt. Puree until smooth and well combined. Let rest 5 minutes.

Set a 10-inch skillet over medium-low heat. Add just enough oil or butter to the pan to lightly coat it. Once hot, add a few tbsp of batter to the pan and swirl or spread into a thin layer that reaches the edges.

Cook until edges are cooked and can be loosened with a spatula. Loosen all the way around and then lift one edge gently and work spatula underneath (I found it easiest to grab the loosened edge with my fingers while working the spatula under the crepe so I could flip it).

Flip and cook on the other side until lightly browned. Remove and lay on prepared baking sheet, then continue with remaining batter. You can layer another piece of parchment on top of the first set of crepes as more come off the pan.

Edit: Just took a look at their Menu and they don't have a single traditional plate... No Lomo Saltado(steak stir fry with french fries), Bistec a lo pobre(steak with egg, sweet plantians m fries and rice) , chaufa(think fried rice), Jalea(fried seafood platter), Tallarin verde(spaghetti in a suace made from spinch and pesto) and ect..

So my false stands... also i don't trust a Hispanic resturant whose whole meal is in English.. like going to eat sushi and the person rolling the sushi is a white dude

I'm sure regular milk wouldn't be an issue. You can use vanilla, give it a go and let me know what you think. It makes about 8 - I wouldn't keep them past 3 days or so.

Cleaning out my fridge and did a whole InstantPot meal - butter chicken, cauliflower aloo and tofu saag. Confession: I really love tofu!

Whoops... Forgot to take pics. I made two batches. The first batch was great and the flavor was on point.

The second batch was good, but not as good as the first. For the first batch, I used Madras curry powder from very reputable Vietnamese brand and I guess it's the only brand that the Vietnamese actually use to make their curry... I ran out of that and substituted in McCormick Madras curry powder for the second batch and I think their curry spice blend is not well-balanced for Vietnamese curry. Oh well, now I know.

Sweet and savory broth with the aroma of curry, lemongrass, ginger, shallot, and garlic. Rich and lightly creamy from the coconut cream, but just creamy enough for an easily slurpable soup. Swimming in the soup were cubes of fried potato, sweet caramelized carrot chunks, and savory spiced meatballs (which are nontraditional, but I needed the protein). Then everything poured into a bowl of rice noodles and topped with chopped cilantro and green onion for a smack of freshness, and finally a squirt of freshly-squeezed lime juice for some bright acidity to cut through and complement the rich broth. A very warm and comforting meal.

I was asking because I tried out this Thai place nearby that has a killer vegetable, chicken and tofu red curry soup that is just wonderful. Your dish sounds very similar, but I'm afraid to brave H Mart for the lemongrass.
