I've never worked in Vegas,but I'm sure it's a hot spot for that like you said .
If you haven't seen it much or at all in your travels, that's awesome. No one should have to see that.

Do you get special discount rates if you stay at a chain's higher end hotels, or just steep discounts at your specific hotel that you work at?
Are you able to sign up for the reward program of your hotel?
Do you have any insight into the reward programs?
What's the cheapest a room at one of the big chains goes for (Marriott, Hilton, etc.). Do you get a lot of mattress runners?

Yes you can sign up for the rewards program of your brand, Marriott, Hilton, IHG, etc. , but generally, you can't earn points using your employee discount rate. You can earn points without the employee rate being used.
Rewards programs are worth it if you travel enough. If you spend all that money , might as well earn perks and free nights along with it. If you travel as an employee for a company and the company reimburses you after you pay with your own money, it is especially advantageous. You end up getting free hotel stays on your company dime along with the benefits of the rewards program.
IIRC, Hilton could go as low as like 19 to 29/night with the employee rate , but that was years ago.
I've never heard of anyone stealing a full size mattress from a room, those are huge and heavy, it'd be hard to sneak out. But if you didn't care about being caught on camera, anyone can take a mattress, but you'd need a pick up or another large vehicle to drive away with it. I'm sure it happens, but it's not worth it to most people who are into theft.
People have stolen small sofa mattresses and inflatable beds though.
