I've received these kinds of texts a million times. The best response is no response. No joke, no quip, no nothing. She assumes you're still thinking about her, and by not even acknowledging her presence, she'll realize that you legit do not care anymore and have forgotten about her, and that will eat away at her for a long time.
I had one of these texts like 5 years ago, and legit it spiraled into her sending me like million messages. Started off with the hey this reminds me of you, to her then getting increasingly angry I haven't responded, to her calling me a piece of chit, to saying I never even had a chance with her anyway, to then her apologizing, to then her asking my friend if I had a new number, to then asking my family if I was alright, to then her apologizing for everything and realizing the entire problem all along was her and not me, and that she'll never forget me and leave me alone now, and wishes me the best.
The misc taught me a few key rules in life, and no contact means no contact.

When you receive a text from an ex like this as others have said she’s sending feelers out there. But of course is to chicken **** to be direct because she’s a woman. A lot of dudes think “this is great! She wants to get back together!” When in reality the girl usually wants to see if she still has you on the hook. Women get off on that kind of power and affirmation. By you engaging in her, meeting up with her, seeing her again, etc you are just giving her more and more leverage
You might be able to get a bang out of it. But if you have ANY residual feelings remaining towards her (and we are human, it’s ok if you do) then you should no contact and shut that down quick. If you don’t have any residual feelings towards her than why waste time with sex or seeing her again?
