Checking in in new thread.

So I did a meat smoking experiment on Friday. I have been wanting to do a smoked prime rib but that is just an insane amount of food for two adults and a 3 year old, and it ends up being too cold to smoke one for christmas dinner when we have the family over.

So I bought a wide/thick half beef tenderloin roast and treated it like a prime rib.

kosher salt and a good rub with pappy's prime rib seasoning and let it set up for 24 hours. 3 hours in the smoker at 225 using mesquite chunks. Removed from smoker at 125 degrees and instantly seared it in a screaming hot cast iron pan for 30 seconds on each side.

Rest for 10 minutes then slice. Fresh hot horseradish and au jus with same seasining added

Mother. Of. God.

I ate myself stupid.

What used to help was IF in the morning, burn through all the stupid chit I had to do, then workout around lunch, come back and eat lunch at my desk then the rest of the day wouldn't be as bad.
