Blah. Quinoa is fine, but rather just cut the portion and swap about half the pasta for zucchini cut in matchsticks.

You don't even need a special tool; just chop of the ends, slice lengthwise,slice out the seedy center, and you can sautee it in the same pan with the ground turkey and seasoning.

Cutting the seed part out is how you can keep the zucchini a bit firm/not watery.
