Kind of poverty, but the Wasabi was spicy, and it was pretty damn good.

Even did yam tempura.

For rolls had crab (pollock, gay), smoked salmon and smoked cream cheese, yam tempura roll, and Cucumber roll.

Did lunch the next day too.

Just winged it. You mirin or nah?

Spent like 60 bucks, but had leftovers, plus some for lunch the next day and I had lunch leftovers today from lunch the day before lol.


I thought we spent a lot, but was like 3 solid meals.


The yam tempura worried me the most but it was really fking good.

I probably broke some kind of Japanese law, but wasn't entirely sure where to get sushi grade fish here.

I could do the cooked shrimp sushi like pictured maybe.

looks like you went a little heavy on the dry and not heavy enough on the batter with the tempura

whatever flour you are using use more and more egg yolk and less panko

i hope you used sushi rice and not jasmin, but looks like it

looks pretty good most people dont let the rice cook in a rice cooker with slightly extra water and let it steam for a couple extra hours so its really sticky and soft but not too soft

did you let the rice cool as well so it would be stickier and easier to form/compact when rolling?

Was sushi style "sticky rice ". Put in rice wine vinegar and fluffed/cooled. Did it in a pot. Seemed real sticky

So, I used egg, flour and salt, and rolled in panko once battered then into fryer. It was good, but I wouldn't say it was like the restaurant. Different but good


Will try more egg

I wasn't sure how to hold the fkin yam pieces once I dipped them without wiping off the batter before dropping in the fryer...

i cook sushi rice exclusively pretty much, but i do pot sometimes when im lazy, and its a very nice ceramic pot perfect for cooking rice, but its not the same stickiness/quality for sushi as a rice cooker. It actually is BETTER overall rice texture, but worse for sushi, idk why the rice cooker just locks in more moisture i guess and is a much slower/lower heat cook so it makes the rice more sticky/sushi like.

A video I watched said that even expensive rice cookers are better than cheap ones.

I don't think I have a refined enough palate to know the difference tho.

I'm a chef at Nobu I can help maybe.

you made Futomaki size rolls with full size nori sheets, to get less rice it helps to use half sheets size, this is typical what you will find in sushi places, the big rolls are usually weird funny special rolls or a new years special roll.

You can make killer sushi at home with even basic cheap ingredients if your chef skills are on point....

I make some killer low budget sushi at home when I'm in the moods, but ehh I get bored cause make it everyday.
