People don't understand police fights. Could you beat her up? Yes. But can you get a hold of both arms and subdue her before she kills you or stabs you with a knife? Maybe. Do you want to take that chance? Beating someone's ass is way easier than handcuffing them.

It's hilarious to me in a not-funny-at-all sort of way when people talk about "disarming" a knife. You know what they actually teach in self-defense class about knives? Run away if possible, because you WILL get stabbed. srs. Cops backing away and quickly tasering her is far more realistic scenario than waiting around to get stabbed in the jugular.
