For most areas of math and applications of math, you don't need to scrutinize the foundations to that level. I'd be surprised to see a deep need for a category theory approach to something in mathematicial biology. You might look at Robert Rosen's work.

It's just a buzzword for them... it's lost all meaning.

There are probably less than 100 living people from the Nazi era right now. Down to a handful that don't have full blown dementia at this point.
