You can sue them in district court for civil claims (or go through a justice of the peace for small claims under 5K worth of compensation), you can pursue criminal charges through your local magistrate. In this situation, I wouldn’t call the cops. They are as ignorant and useless as the misc when it comes to legal understanding. I would just take the evidence to the magistrate and have a warrant put out for their arrest.
To be a little fuck face, I would notify of them my intention to take this action. If a civil lawsuit is warranted, in that notification I would include a reasonable list of legal demands that if adhered to, would result in me dropping the civil case. Criminal charges would keep going though.
You CANNOT do something like threaten criminal charges if they don’t pay a demand for your civil charges though. You have to be very clear, that is not one of your legal demands. If you choose to pursue criminal charges, that has to be independent of any civil agreement.
“Blackmail” is legal, in fact it is a primary cornerstone of our legal system, but you have to do it correctly.

Op is right. Accessing someone's private data without consent is a crime. Look it up. Plenty of case law for support this. Don't ever be fucking stupid enough to use it as 'evidence' to support accusations you make against someone. It'd be like putting your head against a wall, and punching your face so that the wall can feel a vibration.

That idea didn’t even cross my mind because I have just never felt compelled to do it.
I was just outlining a way to protect ourselves if someone did it to you, but that is also a great reason to know this information.
