REDFISH225 and other MS DELTA/LA brehs GTFIH

Making Jambalaya tonight...Do I add just enough water to cover the ingredients after adding the rice, or do I go to the first finger joint?

After I brown my meats I add the rice and let it cook for about 10 minutes then add water about 1/2 inch over the rice and meat. Cook about another 10 minutes, put heat on low, cover and cook another 15-20 minutes.

I don't like onions in general but vidalia onions cooked down in butter with a little soy or worcestershire sauce is straight fire

Had Shrimp on Monday...Sure that isn't more of a gumbo thing? None of the recipes I've looked at have called for a roux.
